Chocolate Peanut Butter Caramel Cups

Take three surefire flavours – chocolate, peanut butter and caramel – and serve them together as a special treat

Better than store-bought candy! These chocolate, peanut butter and caramel cups are a real homemade treat

Chocolate, peanut butter and caramel — what a flavour combination.

I dare you to stop at just one! With Easter weekend around the corner, now’s the time to whip up a batch of these special chocolate treats.

Ingredients

  • Silicone mini tart or candy mould
  • 1 cup chopped good-quality chocolate, 65% cocoa or better
  • ¾ cup feuilletine*
  • ½ cup peanut butter
  • ½ cup caramel sauce
  • ⅓ cup Feridies brand peanuts
  • ⅓ cup melted chocolate for sealing
  • Gold flakes to finish

*Feuilletine are crispy sweet flakes, similar to wafer crumbs, commonly used by pastry chefs in chocolate recipes. You should be able to find feuilletine at local gourmet food stores.

Instructions

  1. Place chopped chocolate in the top of a double boiler and heat until melted.
  2. Remove the chocolate from the heat and stir in the feuilletine.
  3. Using a small teaspoon, line the bottom and sides of the silicone mini tart of candy mould with the chocolate mixture.
  4. You should have 18 chocolate cups.
  5. Chill the lined mould in the refrigerator for 5 minutes to set the chocolate.
  6. Spoon a scant teaspoon of peanut butter into the cavity of each chocolate shell, followed by a good drizzle of caramel sauce.
  7. Top each portion with 2 peanuts.
  8. Seal the chocolate cup closed using a smear of the melted chocolate.
  9. Garnish each sealed cup with a few flakes of gold.

Makes 18 pieces.
