If you’re looking to kick it up a notch with your side dishes, try this jasmine rice with fresh herbs.

Not only does it taste incredible, but your body will also benefit: parsley is rich in iron and mint is soothing to the digestive tract.

Ingredients

  • 3 tsp olive oil
  • 1 cup jasmine rice
  • 1/4 cup butter
  • 1/2 cup finely chopped onion
  • grated zest of lemon
  • 2 tsp fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • 1 tsp salt
  • 1/4 cup chopped toasted cashews
  • 1/3 cup coarsly chopped fresh mint

Instructions

  1. Heat oil. Add rice. Cook and toss a couple of minutes.
  2. Transfer to cooking pot and add all remaining ingredients (except mint and cashews) and cook rice until fluffy.
  3. Turn into serving bowl and toss with cashews and mint.
