Mixed Green Salad with Raspberry Chipotle Vinaigrette

Give your tomato, avacado and carrot salad a sweet raspberry dressing

This summer salad is made delicious with an easy raspberry chipotle vinaigrette

Imagine: a delicious dressing made from three ingredients. You can take simple greens to a new level just by combining a good olive oil and balsamic vinegar with raspberry chipotle sauce for a sensational dressing. You can find several brands of raspberry chipotle sauce, a condiment that doubles as a marinade. In addition to making a great vinaigrette, it can be a yummy topper for baked brie or a glaze for chicken breasts.

Ingredients

Vinaigrette

  • ¼ cup balsamic vinegar
  • ⅓ cup raspberry chipotle sauce
  • ⅔ cup extra virgin olive oil

Salad

  • 6 cups mixed greens
  • 1 ripe avocado, peeled and sliced
  • 1 carrot, julienned
  • 1 cup halved grape tomatoes or quartered large tomatoes
  • Fleur de sel
  • Freshly ground pepper

Instructions

  1. To make the dressing, whisk the vinegar and the raspberry chipotle sauce together in a bowl. Slowly whisk in the oil until the dressing emulsifies.
  2. To serve, divide the greens among six plates or bowls.
  3. Drizzle vinaigrette overtop, arranging avocado, carrot and tomatoes on the greens.
  4. Finish with a pinch of fleur de sel and freshly ground pepper.
  5. The remainder of the vinaigrette will keep up to three weeks, chilled.
