Recipe: Caviar Baskets

Caviar canapes with cream cheese
These caviar canapes make a perfect appetizer for an elegant party or dinner gathering
Ingredients
- 8 ounces soft cream cheese
- 1 small shallot, chopped very fine
- 2 lemons, firm without blemishes
- 1 loaf sliced white bread
- 60 grams caviar (or good-quality lumpfish roe)
- Snipped chives, for garnish
Instructions
- Whip the cream cheese together with the shallot.
- Spoon mixture into a piping bag fitted with a star nozzle and set aside.
- Using a channel knife, take long strips of peel off the lemons and set the strips aside.
- Using a 1-1/2-inch round cookie cutter, cut circles from the bread slices.
- Spread a thin layer of caviar over each bread round, leaving the edge clean.
- Carefully pipe a ring of the cream cheese and shallot mixture around the edge of each bread round.
- Finish the canapé by placing a lemon strip on each side of the round creating a handle.
- Garnish with a snip of chive.
- Chill until serving time.
Makes 24 baskets.
