Recipe: Noisettes of Lamb with Port, Blackcurrant and Blue Cheese Sauce

Noisettes of lamb make an easy and delicious dinner for you or for a dinner party

Noisettes of lamb are tender cutlets of lamb rolled much like a swiss roll. Cooked with port, blackcurrant and blue cheese sauce, they make an exceptional - and easy - meal

Ingredients

  • 2 tbsp (30 ml) olive oil
  • 8 noisettes of lamb (cut from the loin) or 4 lamb leg steaks
  • 2-3 tbsp (30-45 ml) Port
  • 4 oz (100g) frozen blackcurrants
  • 2-3 tsp (8-12 g) sugar
  • 3 oz (75 g) creamy blue cheese

Instructions

  1. Heat oil in a large frying pan.
  2. Fry lamb for 2-3 minutes on each side or according to taste.
  3. Remove from pan and keep warm.
  4. Lower heat and add Port to pan juices, with blackcurrants and sugar.
  5. Cook for 2-3 minutes until syrupy.
  6. Stir in the cheese, allowing it to melt in the heat of the sauce, and serve over lamb.
