Tasty Tuna Melt

Cupboards bare? Don't order pizza. Try making this tasty tuna sandwich with ingredients that are easy to always have on hand

This meal was inspired by a sandwich I had at Joe's Grill in Kitsilano. It's a relatively healthy meal (better than ordering pizza) and I always have all of the ingredients on hand so it's easy to whip up in a pinch.

Canned goods keep for so long that when things like tuna, canned tomatoes and beans go on sale I buy lots so easy meals like tuna sandwiches, pasta and chili are always possible to make.

I like to use dense, chewy, sprouted grain bread and I always have a loaf or two on standby in the freezer. Adding lots of chopped sweet onion makes the sandwich nice and crunchy, and the sweet chili sauce adds an extra little something, boy do I love my sweet chili sauce!

Serve this meal with a great big salad or steaming bowl of vegetable soup because the sandwich itself is lacking in the produce department. 

Ingredients

  • 1 can tuna
  • 1/2 sweet onion, chopped
  • 1 tbsp mayo
  • 1 tsp sweet chili sauce
  • 1 tbsp butter
  • 4 pieces bread
  • 2 slices cheese (I like extra old white cheddar)
  • 1 tsp mustard
  • ketchup and chili sauce for dipping

Instructions

  1. Heat large frying pan over medium-low heat.
  2. In medium bowl, combine tuna, onion, mayo and chili sauce.
  3. Butter one side of each slice of bread and place two slices in frying pan, butter side down. 
  4. Top each slice with half of tuna mixture, cheese, mustard, and remaining slice with butter side facing up.
  5. Cook for about 4 minutes per side or until bread is slightly brown and cheese begins to melt.
  6. Serve with a dollop of ketchup and chili sauce on each plate.
