Beverage director Trevor Stride of Famoso Neapolitan Pizzeria shares three Italian summer cocktail recipes to enjoy in the warm weather

Aperol Spritz

The most common aperitivo in Italy, the Aperol Spritz is a combination of bitter flavours, sweet orange, and crisp Prosecco.

Ingredients

  • 1 oz Aperol
  • Ice
  • Prosecco
  • Soda
  • Orange wheel for garnish

Instructions

  1. In a tall highball glass filled with ice, add Aperol.
  2. Top with equal parts Prosecco and soda.
  3. Drop in an orange wheel and serve.

Paper Plane

Featuring flavours of sweet orange, bitter herbal notes and a bourbon backbone, the Paper Plane is surprisingly approachable and refreshing.

Ingredients

  • ¾ oz Bourbon
  • ¾ oz Aperol
  • ¾ oz Amaro
  • 2 lemon wedges
  • Ice
  • Orange peel for garnish

Instructions

  1. Add bourbon, Aperol and Amaro to a cocktail shaker.
  2. Squeeze and drop both lemon wedges into the shaker.
  3. Fill with ice and shake for 20 to 25 seconds.
  4. Strain into a chilled coupe glass, garnish with an orange twist and serve.

Negroni

A bittersweet classic Italian cocktail, the Negroni was born in 1919 when count Camillo Negroni wanted a stiffer Americano and asked for it to be made with gin instead of its traditional soda water.

Ingredients

  • ¾ oz London Dry Gin
  • ¾ oz Campari
  • ¾ oz Vermouth Rosso
  • Ice
  • Orange peel for garnish

Instructions

  1. In a rocks glass, pour London Dry Gin, Campari and Vermouth Rosso over ice.
  2. Stir for 10 to 20 seconds.
  3. Garnish with an orange twist and serve.
