Pesto-glazed Chicken and Potatoes

Using ready-made pestos makes this meal super speedy and uber delicious

Roasted chicken and potatoes is one of my all-time favourite meals. It’s easy – just throw everything together in a roasting pan and forget about it in the oven for an hour – and oh-so comforting and delicious

I had two of Maison Le Grand’s pestos on hand (you can buy them at Safeway) so I tossed the potatoes with one and brushed the chicken with the other. This was one of the easiest dinners I’ve made in a while and definitely one of the most tasty. The flavours!

To make this meal a little more special, serve it with a nice chardonnay. I always look to Swirl Wine Store’s wines on sale under $15 and Marquis Wine Cellar’s wines of the week for a little inspiration. 

Serves 6

Ingredients

  • 1 whole chicken, halved with backbone removed
  • 1 small bag baby potatoes, cut into thirds
  • 1/4 cup Maison Le Grand garden pesto
  • 1/4 cup Maison Le Grand sun-dried tomato pesto

Instructions

  1. Preheat oven to 375F.
  2. In large bowl, toss potatoes with garden pesto.
  3. Place chicken halves in roasting pan and brush with sun-dried tomato pesto.
  4. Arrange potatoes around chicken, cover roasting pan with lid, and cook for 45 minutes.
  5. Remove lid and cook for another 15 minutes, or until chicken is no longer pink in middle and juices run clear when pierced. Another good way to tell if the chicken is done is to tug on one of the legs. If it comes off easily, the chicken is most likely done.
