Sushi Rice Blocks

Sushi is generally the first thing that disappears from any party table. This simple version can help cut the costs of purchasing an elaborate sushi tray from a restaurant, and leave you looking like a star.

Ingredients

Sushi Rice

  • 1-½ cups sushi rice
  • 2-¼ cups water

Toppings

  • 5 Tbsp sushi seasoning*
  • Wasabi mayonnaise or wasabi mustard
  • Fresh fish of choice, cut into small pieces

*You can purchase bottled sushi seasoning, usually made with a mixture of rice vinegar, sugar and salt.

Instructions

  1. Wash uncooked rice several times in clean water until no longer cloudy. Drain the rice and place in a small pot.
  2. Add 2-¼ cups fresh water, cover, and bring to a boil. Turn the heat down to a simmer and cook until all the water is absorbed. Immediately remove the rice from the pot and spread it out on a cookie sheet.
  3. Add the sushi seasoning and fan the steam to cool the rice. Once the steam subsides, press the rice into blocks with a rice mould or your shape of choice. Allow to cool.
  4. Top each rice block with a dollop of wasabi mayonnaise or wasabi mustard, followed by your choice of fish.
  5. Chill until ready to serve. Makes 36 pieces.
