Avocado Smoothie

Ingredients

  • 2 medium-sized avocados
  • 2 cups milk
  • 1 cup Greek vanilla yogurt
  • 16 ice cubes
  • 4 tablespons agave nectar, honey or maple syrup

Directions

  1. Place all the ingredients in a blender and mix until smooth.
  2. Pour into glasses.

Beet, Pineapple, Avocado & OJ Smoothie

Ingredients

  • 1/2 ripe avocado, pitted and scooped out
  • 2 cups beets, peeled and diced
  • 2 cups pineapple, peeled, cored and diced
  • 3/4 cup orange juice, freshly squeezed

Directions

For a smoothie

  1. Place all ingredients in the blender and purée until completely smooth.
  2. Pour into glasses.

For juice

  1. Pass the beets and pineapple though a juicer.
  2. Place the beet and pineapple juice in blender along with the avocado and orange juice and puree until smooth.
  3. Pour into glasses.

Avocado, Mango, Date & Yogurt Smoothie

Ingredients

  • 1 ripe avocado, halved, pitted and scooped out
  • 2 cups fresh mango, fresh or lightly thawed from frozen
  • 2 cups plain yogurt (1 cup yogurt and 1 cup milk if you prefer it thinner)
  • 2 teaspoons lime juice
  • 6 Medjool dates
  • 2 tablespoons pistachios, pecans or almonds, coarsely chopped for garnish (optional)

Directions

  • Place the mango, yogurt, lime juice and dates in the blender and purée until completely smooth.
  • Sprinkle the pistachios on top and serve.

Chef’s tip: You can add a few ice cubes to the blender to make it more of a frappé.

Avocado, Strawberry & Orange Smoothie

Ingredients

  • 1 ripe avocado
  • 350 ml hulled strawberries (frozen if not in season)
  • 350 ml orange juice

Directions

  1. Cut open the avocado and remove the pit and flesh.
  2. Place the avocado, strawberries and juice in a large glass.
  3. Using a hand blender, purée the mixture until it has the consistency of a smoothie.
  4. Serve in a cold glasses.

Chef’s tip: The strawberries can be replaced with raspberries, blueberries, mango, a peach or pineapple.
