Better Berries

Best not to pile store-bought, “U-Pick” or garden-harvested berries from your garden on top of one another or they’ll be puree in the wink of an eye, especially in hot weather. A better idea – while berries await their fate of clafouti, shortcake or jam, layer singly on paper towel. Treat them tenderly, avoiding refrigeration; a basement or other cool, well-ventilated room is best for short-term storage. Washing promotes cell wall breakdown so wash just before using.
