An easy way to use up those leftover egg whites
No need to toss those leftover egg whites! They make great crepes
But what does one do with four leftover egg whites?
They sat in a bowl in my fridge for a few days until I had a chance to Google “egg white recipes.” I learned that many people freeze their egg whites in ice cube trays for later use. Loathe to be quite that industrious, but reluctant to toss such wonderfully low-fat sources of protein, I stumbled upon a recipe for egg white crepes on my new favourite recipe-sharing site Allrecipes.com.
I happened to have some frozen blueberries in the freezer, and with a little flour, oil and milk, quickly had myself a surprisingly filling and super-easy dinner. I’ve already mentioned how much I love breakfast for dinner, and this fit the bill perfectly.
Egg whites are also useful in a variety of desserts, and they make for uber healthy omelettes.
