No need to toss those leftover egg whites! They make great crepes
First sign I'm turning into my mother: I saved the egg whites from the chocolate cream pie I made over the weekend.
But what does one do with four leftover egg whites?
They sat in a bowl in my fridge for a few days until I had a chance to Google "egg white recipes." I learned that many people freeze their egg whites in ice cube trays for later use. Loathe to be quite that industrious, but reluctant to toss such wonderfully low-fat sources of protein, I stumbled upon a recipe for egg white crepes on my new favourite recipe-sharing site Allrecipes.com.
I happened to have some frozen blueberries in the freezer, and with a little flour, oil and milk, quickly had myself a surprisingly filling and super-easy dinner. I've already mentioned how much I love breakfast for dinner, and this fit the bill perfectly.
Egg whites are also useful in a variety of desserts, and they make for uber healthy omelettes.
