Freezing Herbs

Use one herb alone such as parsley ­(pictured), thyme, oregano or try a combination of your favourites. Chop just the leaves and soft stems and fill the sections of the tray. Pour hot water or stock over them and freeze. When frozen, remove cubes from the trays and store in plastic bags for later use. Herb cubes may be used to season soups, stews and sauces. For decorative party drinks try mint or woodruff “cubes.”
