Kale Apple Tofu Miso Salad

Miso combined with ginger, garlic, honey, tahina, and rice vinegar creates a tasty Asian-inspired dressing atop fresh kale, apples and tofu

When you’re on the go and need fast nutrition, create a simple but hearty kale salad tossed with apples, tofu, sesame seeds and miso dressing

When time is a sparse, a quick and tasty salad that fills you up shouldn’t be underestimated.

Ingredients

Salad:

  • 1 bunch kale
  • 1 block extra firm tofu
  • 1 apple
  • Sesame seeds

Dressing:

  • 1 tbsp. minced fresh ginger
  • 2 large garlic cloves, minced
  • 2 tbsp. miso paste
  • 2 tbsp. tahini (sesame paste)
  • 1 tbsp. honey
  • 1/4 cup rice vinegar
  • 2 tbsp. vegetable oil
  • 2 tbsp. toasted sesame oil

Instructions

  1. Separate the kale leaves from the stems and discard the stems. Slice the leaves into thin ribbons.
  2. After you’ve removed all the moisture from the tofu by putting it between two paper towel sheets and putting something heavy on top, cut the extra-firm tofu up into little cubes.
  3. Cut up your apple into small cubes as well and add both the tofu and apple cubes to the salad.
  4. Mix all the ingredients for the dressing together in a spill-proof container (mason jars work really well). Shake the dressing until all the ingredients are combined.
  5. Drizzle the dressing on top of the salad and toss to combine.
  6. Sprinkle sesame seeds over top to finish.
