Caviar canapes with cream cheese

These caviar canapes make a perfect appetizer for an elegant party or dinner gathering

Ingredients

  • 8 ounces soft cream cheese

  • 1 small shallot, 
chopped very fine

  • 2 lemons, firm without blemishes

  • 1 loaf sliced white bread

  • 60 grams caviar (or good-quality lumpfish roe)

  • Snipped chives, for garnish



Instructions

  1. Whip the cream cheese together with the shallot.
  2. Spoon mixture into a piping bag fitted with a star nozzle and set aside.
  3. Using a channel knife, take long strips of peel off the lemons and set the strips aside.
  4. Using a 1-1/2-inch round cookie cutter, cut circles from the bread slices.
  5. Spread a thin layer of caviar over each bread round, leaving the edge clean.
  6. Carefully pipe a ring of the cream cheese and shallot mixture around the edge of each bread round.
  7. Finish the canapé by placing a lemon strip on each side of the round creating a handle.
  8. Garnish with a snip of chive.
  9. Chill until serving time.

Makes 24 baskets.
