Recipe: Ice Cream Bombe?

Cool your body and blow your tastebuds with this chocolate cherry ice cream bombe

This frozen ice cream dessert is truly da bombe!

There’s no better way to cool down on a hot day than with ice cream. And this ice cream bombe will really blow you away


Ingredients

  • 1/2 litre good-quality vanilla ice cream

  • 1/2 litre good-quality chocolate or
 strawberry ice cream

  • 10-12 amaretti cookies, crushed

  • 2 ripe bananas, peeled and sliced

  • 1 (250 mL) jar brandied French cherries

  • 4 egg whites

  • Pinch cream of tartar

  • 1/4 cup granulated sugar



Instructions

  1. Soften ice cream at room temperature until soft enough to spread.
  2. Line a 1-litre stainless-steel or glass bowl with plastic wrap.
  3. Spoon 1/2 the vanilla ice cream into the bottom.
  4. Sprinkle with a handful of crushed cookies, then a layer of sliced bananas.
  5. Top with 1/2 of the chocolate or strawberry ice cream.
  6. Sprinkle with a handful of the crushed cookies and a layer of cherries.
  7. Repeat with the remaining ice cream and layers.
  8. Fold the plastic wrap over the top of the ice cream bombe and freeze in the bowl for at least 5 hours or overnight.
  9. When ready to serve, beat egg whites with cream of tartar until soft peaks form.
  10. Slowly pour in sugar, beating to combine.
  11. Place beaten whites into a piping bag fitted with a star tip.
  12. Remove bombe from the freezer. Invert bowl and remove plastic.
  13. Place bombe on a serving plate and pipe egg whites all over, covering the ice cream completely.
  14. Brown the whites using a kitchen torch. Serve immediately.

Serves 6-8.
