Recipe: Seared Scallops with Gin and Butter Sauce?

Seared scallops are quick and easy to make, and add an understated elegance to any plate, especially when they're cooked with gin

Glam up your scallops with a rich and tasty gin butter sauce


Ingredients

  • 16 sea scallops

  • Pinch of fleur de sel

  • Grinding of fresh pepper

  • 2 Tbsp. grapeseed oil

  • 2 Tbsp. fresh squeezed lime juice

  • 2 Tbsp. your favourite gin

  • 3 Tbsp. unsalted cold butter

  • 1/3 cup finely snipped chives



Instructions

  1. Season the scallops with the fleur de sel and pepper.
  2. Heat a non-stick pan over high heat.
  3. Add the oil and when oil is hot, place the seasoned scallops in the pan. Sear for about a minute on each side.
  4. Remove scallops and place in a warm oven while you make the sauce.
  5. Wipe the pan clean with paper towels and return to the heat.
  6. Add the lime juice and gin. Bring to a boil and reduce for a few minutes.
  7. Turn the heat down to medium and whisk in the butter, a tablespoon at a time. The sauce will begin to thicken.
  8. Turn the heat off. Add the scallops to the pan and sprinkle the chives on top.

Serves 4.
