This soup is perfect for the start of the cold outdoor season, a rainy night when you want something quick, or as a side with a sandwich
Some things are just better when they’re made from scratch—and making something with your own two hands provides such satisfaction. When you cook from scratch, you know exactly what ingredients go into your meals, and it offers you the flexibility to adjust your recipe for dietary or taste preferences.
Dehydrated meals are expensive! If you’ve ever shopped for a backpacking trip, you’ve seen that mass-marketed, pre-packaged meals are pretty pricey. Luckily, you can make simple dehydrated meals at home that will save you space and time, and provide you with fuel for the road/trail/adventure. A dehydrator is a great investment not only for soups—I’ve been drying my herbs from my garden and grinding them for my spice shelf.
Note: If you’re going to be making a recipe in the near future that requires a mirepoix/sofrito ex. A Bolognese, other soup, etc. you can make extra and dehydrate it for future recipes like this!
