Rosemary Garlic Pumpkin Seeds

For a tasty and healthy treat, make some rosemary garlic pumpkin seeds:

  • Remove as many loose seeds as possible from a pumpkin and place them in a bowl with enough warm water to make them float.
  • Rinse and strain the water off a few times until the seeds are shiny and clean, then fill the bowl with hot water and add salt to taste.
  • Throw in a generous sprig of rosemary, a clove of garlic and a couple of tablespoons of olive oil, and let the mixture sit overnight.
  • The next day, spread the seeds on a cookie sheet and give a light sprinkling of sea salt. Roast in a warm oven for a few minutes until lightly golden brown. Watch them carefully because they will overcook quickly.

Eat them warm, right out of the oven!
