Summer is a great time to take advantage of our locally grown seasonal fruits. From B.C. blueberries to Okanagan peaches and Fraser Valley cherries, there is an abundance of fresh fare to choose from.

A fun and easy way to savour these incredible summer flavours is is to turn them into thirst-quenching boozy popsicles (or virgin, if you wish).

Here are three fruity cocktail popsicle recipes, plus one for the kids…

 

1. Fresh Watermelon Margarita Popsicles

INGREDIENTS

  • ? cup sugar
  • ? cup fresh lime juice
  • 4½ cups seedless watermelon, chopped
  • ¼ cup tequila
  • ? tablespoon cayenne pepper
  • Materials needed: Popsicle mold or Zipzicle pouches

INSTRUCTIONS

  1. Blend the sugar and lime juice in a blender until the sugar dissolves.
  2. Add the watermelon, tequila and cayenne. Purée until smooth.
  3. With a funnel, pour the mixture into the mold or Zipzicle pouch.
  4. Freeze until firm and enjoy!

 

2. Strawberry Vodka Popsicles

INGREDIENTS

  • 1 lb Fraser Valley strawberries
  • ½ cup sugar
  • 1 freshly squeezed lemon, juiced
  • ¼ cup vodka
  • ½ cup water
  • Materials needed: Popsicle mold or Zipzicle pouches

INSTRUCTIONS

  1. Combine water and sugar in a medium pot and bring to a gentle simmer. Stir until sugar dissolves.
  2. Add strawberries and continue to simmer on medium for about 5 minutes.
  3. Once the strawberries start to break down and the water is thick and red, it is done.
  4. Remove pot from heat and let cool for 10 minutes. In a blender, combine strawberry mixture, lemon juice and vodka. Blend for approximately one minute.
  5. Pour into popsicle mold or Zipzicle pouches.
  6. Place in freezer for at least an hour or until frozen.

 

3. Peach Bourbon Popsicles

INGREDIENTS

INSTRUCTIONS

  1. Combine the ingredients in a blender and pour into popsicle mold or Zipzicle pouches. Use a funnel for easy filling.
  2. Place in freezer for at least an hour or until frozen.

 

4. Cherry Lime Popsicles – this one is for the kids

INGREDIENTS

  • 1 lb fresh B.C. cherries, washed and pitted
  • 2 cups freshly squeezed lime juice
  • 1 cup water
  • 2 tablespoons honey
  • Materials needed: Popsicle mold or Zipzicle pouches

INSTRUCTIONS

  1. Blend and purée all ingredients for one minute or until smooth.
  2. Pour into mold or Zipzicle pouch and freeze until frozen.
  3. Enjoy—simple and delicious!
