Purple Peppers

This unusual-coloured pepper, Purple Beauty, grows best in a warm position in the veggie patch – add a few handfuls of organic fertilizer to give it a good start, says Mary Ballon, president of West Coast Seeds.

These peppers move through several colour stages before reaching their deep-purple colour.

Pick a few early peppers, but if you want to enjoy the full purple colour and the extra flavour, leave some on the plant to develop fully. This is why coloured peppers are more expensive to buy: they have to stay on the vine longer than green peppers.
