Thinning Beets

It’s time to thin the late summer seeding of ‘Detroit Dark Red’ beets in September. It’s easy to replant the seedlings if you use a dibber in moist soil. Now I have three rows of beets growing instead of one!

The leaves are also good for steamed beet greens and torn raw into winter salads.
