Use companion plants tomato and basil to make this delicious appetizer or addition to a summer meal.
6 medium-sized firm red tomatoes Olive oil 12 large fresh basil leaves Sea salt Parmesan cheese Preheat broiler. Slice tomatoes in half, lightly brushing them with olive oil, and place on cookie sheet, cut side up. Top each tomato with one basil leaf. Sprinkle lightly to taste with sea salt, then top with freshly grated Parmesan. Broil until tomatoes are soft and edges are brown. Serve hot, either whole or mashed in a bowl and served over your favourite pasta.
