Recipe: Peanut Sauce

Use this homemade peanut sauce as a dip or sauce for salad rolls, rice dishes and stir-fries

Peanut sauce makes a delicious dip for satays

This quick and easy, versatile Asian-inspired peanut sauce comes to us courtesy of chef David Wong.


Use it as a dip or sauce for salad rolls, rice dishes and stir-fries.

Ingredients

  • 1 Tbsp. vegetable oil 

  • 1 medium onion, diced

  • 3 cloves garlic, diced

  • 1 stalk lemongrass

  • 1 cup water

  • 2 cups soy sauce

  • 1 cup brown sugar

  • 1 cup peanut butter

  • 1/4 cup + 4 tsp. sambal chili sauce

  • 3 lime leaves

  • 1/4 cup + 2 Tbsp. lime juice

  • 1 (300 mL) tin coconut milk



Instructions

  1. Heat oil in a medium saucepan then add diced onion and garlic and sauté together until translucent.
  2. Add lemongrass and cook for a few minutes longer.
  3. Add water, soy sauce, brown sugar, peanut butter, sambal and lime leaves.
  4. Turn heat to low and simmer for 5 minutes, stirring constantly.
  5. Remove sauce from heat and add lime juice. Remove and discard the piece of lemongrass.
  6. Carefully purée sauce until smooth.
  7. Add coconut milk, stir and season to taste.
