Delicious, easy Mexican pizza recipe
When my brother was in high school his sports teams used to sell frozen pizzas to raise money for tournaments and new equipment (this is going to date me but I spent my fundraising days selling bingo cards in smoky halls).
Years later, I can still taste the amazing Mexican pizza that we ate so much of in support of him, so I tried to devise my own.
I like to take the path of least resistance toward my meals so this recipe is quick and easy.
Having a bottle of pizza sauce on hand is a great way to use leftover breads and meats. You can use prepared pizza shells or take advantage of things forgotten in your freezer like pitas, bread crusts and English muffins.
You can also repurpose leftover ground meat, deli meat or scraps from a roast, and use your imagination to make your own one-of-a-kind pizza.
Fully embrace the Mexican spirit with an ice-cold Cerveza (beer) or Cuba Libre (rum and cola with a splash of lime).
