Apple Marzipan Puffs

These apple marzipan puffs are a great little dessert made with prepared puff pastry and crisp Granny Smith apples

Try crowning with a dollop of crème fraîche or good-quality vanilla ice cream while the dessert is still warm.



Ingredients

  • 1 sheet of frozen puff pastry,
 thawed

  • 4 oz. marzipan (almond paste)

  • 8 amaretti cookies (or soda crackers), crushed

  • 4 Granny Smith apples

  • 8 tsp. berry sugar

  • 1 egg, lightly beaten

  • 1 Tbsp. water

  • 1 cup crème fraîche (or vanilla ice cream)



Instructions

  1. Roll pastry out onto a lightly floured board, just slightly to get an even thickness.
  2. Cut the pastry into 8 (4-inch) squares and place them on a parchment-lined baking sheet.
  3. Drop about 2 tsp. marzipan paste into the centre of each pastry square.
  4. Sprinkle each square with 1/8 of the crushed amaretti cookies.
  5. Peel apples, cut in half and core.
  6. Thinly slice the apple halves and lay slices overtop the crushed cookies (half an apple per puff).
  7. Sprinkle each with 
1 tsp. sugar.
  8. Pinch the corners of the pastry together, encompassing the fruit.
  9. Combine the egg with 1 Tbsp. water to make a glaze and brush over each pastry puff.
  10. Chill in the refrigerator for 30 minutes.
  11. Bake in a preheated 400°F oven for 15 to 20 minutes.
  12. Serve warm with a big dollop of crème fraîche or ice cream.
