Chocolate Raspberry Truffle Tart Recipe

Ingredients

  • 2 cups chocolate crumbs
  • ½ cup butter
  • 1 lb. bitterswet chocolate
  • 2 cups whipping cream
  • ½ cup frozen raspberries

Directions

  1. Melt butter over low heat. Once melted, combine with chocolate crumbs and mix well.
  2. Carefully form chocolate crumbs into the sides of a fluted tart pan, ensuring that the crust is packed into all the flutes.
  3. Evenly distribute about 1 cup of chocolate crumbs onto the bottom of the pan. Gently pack down and make sure there are no holes or gaps.
  4. Place crust in fridge to chill.
  5. Melt chocolate in a metal bowl over boiling water on low heat.
  6. In the meantime, heat whipping cream over low heat until lukewarm (do not boil).
  7. Once chocolate is completely melted and whipping cream is at a lukewarm temperature, pour whipping cream into chocolate and genly whisk together until completely incorporated.
  8. Remove crust from fridge, and spread frozen raspberries over the bottom.
  9. Carefully pour chocolate filling over the raspberries until it reaches the top of the crust.
  10. Chill tart in fridge overnight or until filling is completely set.
  11. To serve, remove tart pan and cut using a hot knife. Serve with whipped cream and enjoy!

Makes one 9″ fluted tart.
