Salad season is upon us, and simple dinner salads are especially pleasing on warm nights
Super simple supper salad
The other night I went over to my parents’ house for dinner and my mom had made this lovely chilled salad with a simple vinaigrette dressing. Both recipes were from The Joy of Cooking and I instantly had to try making them myself.
The ingredients were simple and the dressing was basic red wine vinaigrette.
I love using fresh herbs and was very generous with the cilantro. But if you aren’t a fan of cilantro, parsley or chives would probably taste nice, too.
There are lots of recipes online for basic vinaigrette made with red wine vinegar, and it tastes even better the second day once the flavours have melded together. This vinaigrette recipe is extremely close to the one in The Joy of Cooking.
