Halibut Cheeks with Caramelized Onion and Capers

This 15-minute halibut dish is high on taste and low on effort

Fresh halibut goes amazingly well with capers and sweet onions

For nights when you’re short on time but still in need of a healthy meal, here’s an easy 15-minute fish dish 

This quick recipe features simple ingredients that make for a sensational taste.

Ingredients

  • 2 Tbsp. olive oil
  • 1 cup diced sweet onion
  • 1 garlic clove, chopped very fine
  • 2 Tbsp. capers, drained
  • 1 tsp. Chili 2.0 chili paste (optional)
  • 600 grams halibut cheeks
  • ⅓ cup each coarsely chopped basil, parsley and cilantro
  • Fleur de sel and fresh ground pepper, to taste
  • ½ large lime, to finish

Instructions

  1. Heat the olive oil in a large non-stick pan.
  2. Add the onion and garlic and brown, shaking the pan continuously to promote even caramelization.
  3. Stir in the capers and add the chili paste when the onion is caramelized. The mixture should be well browned. Remove the onion mixture and set aside.
  4. Add about 1 Tbsp. olive oil to the same pan then add the halibut cheeks.
  5. Sauté the halibut over medium-high heat until nicely browned on both sides, about 4 to 5 minutes, depending on thickness.
  6. Remove halibut from pan and transfer to serving plates.
  7. Add the onion mixture to the fish. Top with the chopped herbs, fleur de sel and pepper, and finally, finish with a squeeze of fresh lime over all.
  8. Serve immediately.

Serves 4.
