Ingredients

  • ¾ cup whipping cream
  • ½ cup milk
  • 12 oz bitter sweet chocolate (70%), chopped
  • 1 egg, beaten
  • 1 egg yolk

Crust

  • 1 ¾ cup ground, toasted hazelnuts
  • 1 cup almond flour
  • ½ cup butter, melted
  • pinch of salt

Instructions

  1. Over medium low heat, warm the cream and milk. Add the chopped chocolate and whisk to melt and combine. Once fully incorporated, remove from the heat and whisk in the egg and egg yolk. Pour the chocolate mixture into a bowl to cool and then cover and refrigerate until ready to use.
  2. Preheat oven to 400º.
  3. For the crust, in a medium bowl, combine the ground hazelnuts and almond flour. Stir in the melted butter and salt.  Press the mixture into the bottom and up the sides of the desired forms, being careful to spread the mixture as evenly as possible.  Thickness should be about ¼”.  We used two  5” x 5” tart forms. Toast the crust for about  12-15 minutes or until lightly golden.  Remove from the oven and set aside to cool.
  4. When ready to serve, preheat the oven to 300. Spoon the chilled chocolate mixture evenly between the two tart shells and don’t worry about smoothing it out, it will melt as it bakes. Place the filled tarts on a cookie sheet and bake for about 10-12 minutes.  Serve warm and garnish with a little flaky salt.
