Serve your dinner guests a slice of summer with this mouth-watering recipe from Joe Fortes

Crust

  • 2 ½ cups graham crumbs  
  • ¼ cup sugar        
  • 1 cup butter, melted      

Method

  1. Mix together graham crumbs and sugar in bowl.
  2. Add melted butter and mix throughly.
  3. If crust is too wet, add a bit more dry graham crumbs until the crust sticks together and butter is absorbed.
  4. Form crust into a 10″ fluted pan (be sure that the bottom of the pan is removable) by pressing crust into the sides and bottom. Remove excess.
  5. Bake crust at 325 degrees for 5 minutes. Set aside and let cool.

Key Lime Filling

  • 2 cans (28 oz) condensed milk       
  • 8 egg yolks        
  • 1 cup + 4 tbsp lime juice         
  • 1/2 frozen key lime, zested        

Method

  1. Pour condensed milk into a bowl.
  2. Add egg yolks and whisk well.
  3. Add zested key lime to lime juice and let dissolve a bit.
  4. Strain lime juice into condensed mixture and slowly stir until all liquid has been incorporated.
  5. Gently pour filling into prepared crust.
  6. Bake in a 325-degree oven for 10 minutes, rotate and bake for another 8 to 10 minutes until edges are set and the filling moves as a whole.
  7. Remove from oven and let cool.
  8. Place plastic wrap directly on surface and let chill in fridge.
