Recipe: Baileys Chocolate Truffles

Make your own chocolate truffles with the added flavour of Baileys Irish Cream

Got chocolate, cream and Baileys? You’ve got truffles!

Try these simple-to-make chocolate truffles enhanced with the flavour of Baileys

They will keep well in the refrigerator for up to three weeks.



Ingredients

  • 1 cup heavy cream

  • 3 Tbsp. Baileys Irish Cream

  • 1-1/2 pounds good-quality chocolate, such as Callebaut, Cacao Barry or Valrhona 

  • Dark cocoa powder for dusting



Instructions

  1. Heat the cream and the Baileys together in the top of a double boiler.
  2. Chop the chocolate into small pieces and add to the warm cream.
  3. Turn the heat off and stir the mixture until the chocolate is melted and smooth in texture.
  4. Chill until set.
  5. Scoop out small spoonfuls of chocolate and roll into balls.
  6. Roll the balls in the cocoa powder, coating well.
  7. Set truffles on a parchment-lined tray.
  8. Chill until ready to serve.

Makes 60 truffles.
