Recipe: Barbecued Peaches

Add some sizzle to this favourite summetime fruit

The only thing better than peaches in the summertime? Barbecued peaches with caramel sauce drizzled on top

Ingredients

  • 4 ripe but firm peaches

  • 1 cup mascarpone cheese

  • 2/3 cup crushed amaretti cookies

  • 2 Tbsp. amaretto liqueur (optional)



Instructions

  1. Cut the peaches in half, pit and place pieces on a rimmed tray.
  2. Mix together the cheese, crushed cookies and amaretto (if using). Spoon this mixture evenly into the peach cavities.
  3. Transfer the peaches directly onto a hot grill preheated to medium-high and close the lid.
  4. Let the peaches cook for 5 to 8 minutes, until they are still firm but have a little give and the cheese has started to ooze.
  5. Transfer to your serving plate and give the peaches a good drizzle of caramel sauce (instructions follow).

Perfect Caramel Sauce


  • 2 cups sugar

  • 2 Tbsp. water

  • 1 tsp. fresh lemon juice

  • 2 cups whipping cream, at room temperature



Caramel Sauce Instructions

  1. Combine sugar, water and lemon juice in a heavy-bottomed pot.
  2. Bring to a boil and continue to boil until the sugar begins to turn light amber in colour. At this point, it darkens quickly, so watch carefully that it doesn’t burn. The darker the colour gets, the deeper the flavour becomes.
  3. Slowly whisk in the cream. It will spit and spatter, so be careful.
  4. Cool to room temperature before using. Makes 1-1/2 cups.
