Recipe: Blue Cheese & Caramelized Onion Dip

This dip goes great with chips, flatbread and veggies, and is perfect for a picnic or party

It’s worth crying over the onions in this blue cheese and caramelized onion dip

Dips are the perfect party food and this blue cheese onion dip is sure to be the star of your next BBQ

My good friend and long-time sous chef at our cooking school, Doreen Corday, has graciously provided the recipe for this delicious dip. It truly is worth crying over the onions! It goes great with chips, flatbread and veggies. You can make it two days ahead and keep it refrigerated until the night of your party.


Ingredients

  • 1 Tbsp. olive oil

  • 1-1/4 cups thinly sliced onion

  • 1 Tbsp. sugar

  • 3/4 cup mayonnaise

  • 3/4 cup sour cream

  • 4 oz. blue cheese, softened

  • Freshly ground pepper



Instructions

  1. Heat the oil in a medium frying pan.
  2. Add the onion and cook, stirring occasionally, for about 20 minutes until golden brown. Sprinkle in the sugar to encourage browning.
  3. Remove from the heat when the onions are evenly caramelized. Cool completely.
  4. Whisk the mayonnaise and sour cream together in a medium bowl. Add the blue cheese and, using a spatula, mash till smooth.
  5. Stir in the caramelized onion. Season with pepper to taste.
  6. Cover dip and refrigerate until flavours blend, at least 2 hours.

Makes 2 cups.
