Recipe: Green Tea Crème Brulée

Infuse your crème brulée with the delicate flavour of green tea

Try this unique twist on the classic French crème brulée

Still getting over the winter blues? Indulge in this sweet pick-me-up: a velvety crème brulée infused with green tea.

Ingredients

  • 2 tsp (10 ml) loose green tea leaves
  • 1 1/2 cups (375 ml) whipping cream
  • 1/2 cup (125 ml) homogenized whole milk
  • 1/4 cup (60 ml) granulated sugar
  • 1/2 vanilla bean
  • 4 large egg yolks
  • sugar for brulée topping

Instructions

  1. Preheat oven to 325 F (160 C) 
  2. Combine cream, milk, vanilla bean, sugar and tea leaves in medium saucepan over medium heat. Bring to a boil, then remove immediately from heat and cover. Let steep for 15 minutes.
  3. Whisk egg yolks in large bowl.
  4. To make custard, continue to stir yolks while pouring in milk mixture.  
  5. Strain custard and pour evenly into 4 3/4 cup (185 ml) ramekins.
  6. Place ramekins in shallow baking pan. Pour boiling water into pan so it comes halfway up the sides of the ramekins.
  7. Bake 30 to 35 minutes, or until custard jiggles slightly in the middle. Remove from water bath. Let cool at room temperature.  
  8. Refrigerate overnight, or at least 3 hours.
  9. When ready to serve, sprinkle sugar over ramekins and caramelize with a kitchen torch or under the broiler.
