Recipe: Lemon herb vegetable marinade

Thanks to the versatility of lemon, this vegetable marinade is just as delicious on your meats

Lemon herb marinade Ingredients

4 garlic cloves, minced
1⁄2 cup (125 mL) combined chopped fresh parsley, rosemary and lemon thyme
1 sprig chopped lemon grass
Fresh ground salt and pepper, to taste
Juice of 1 lemon
1⁄4 cup (60 mL) olive oil

  1. Combine all ingredients in a bowl and toss with desired meat or veggies.
  2. Allow to marinate for two hours in the refrigerator. Using tin foil or a BBQ saute pan, grill and then serve hot – or cold the next day.

Makes enough to marinate 1 kg (2.2 lbs.) of ingredients. Discard any leftover marinade after use.
