Recipe: Mascarpone and Vanilla Bean Mousse?

Creamy marscarpone cheese adds a sublime texture to this vanilla mousse

This vanilla mousse makes a delicious parfait when layered with fruit

Try this luscious mascarpone and vanilla bean mousse
 for a fresh, quick and easy dessert

Ingredients

  • 1-1/3 cups cream (35% M.F.)

  • 1/2 cup granulated sugar

  • 2 sheets gelatin

  • 2 cups mascarpone cheese

  • 1 vanilla bean (seeds scraped)



Ingredients

  1. Combine cheese and sugar in a small pot and gently warm over low heat.
  2. Add vanilla. Dissolve gelatin in ice water until soft.
  3. Squeeze all the water from the gelatin and stir gelatin into the warmed sugar and cheese mixture until dissolved.
  4. Place in the refrigerator and stir every now and then until cool.
  5. Whip cream into soft peaks and fold gently into the cheese mixture.
  6. This mousse makes a delicious parfait when layered with seasonal fruit, such as sour cherries, apricots, raspberries or nectarines.
  7. The recipe can also be made with yogurt instead of the cheese, and honey instead of the sugar.

Makes 8 servings.
