Recipe: Peas and Pasta

Eating pasta is back in style, and adding vegetables makes this pasta a healthy meal

This wonderful springtime dish is quick, easy and tasty — what more could you ask for?


Ingredients

  • 1/4 cup good-quality olive oil

  • 1/2 cup peeled pearl onions, or 1/2 small 
onion, sliced

  • 1 tsp. granulated sugar

  • 1 garlic clove, minced

  • 1 large fresh tomato, diced

  • 1/2 cup tomato sauce

  • 1 cup sweet peas, shelled (fresh or frozen)

  • Sea salt and freshly ground pepper, to taste

  • 3 cups cooked penne (or your choice of cooked pasta)

  • Fresh basil leaves, chopped (for garnish)

  • Grated Parmesan cheese (to finish)



Instructions

  1. Heat the olive oil in a sauté pan.
  2. Add the pearl onions or sliced onion.
  3. Sprinkle with the sugar to promote caramelization and sauté for a few minutes, until the onions begin to brown.
  4. Add the garlic, diced tomato, tomato sauce and fresh or frozen peas. Sauté for about 3 minutes.
  5. Season with the sea salt and pepper, to taste.
  6. Toss in the cooked pasta until well combined.
  7. Garnish with fresh chopped basil and grated Parmesan cheese.
  8. Serve immediately.

Serves 2.
