Recipe: Rice Salad with Orange Dressing

Use a 7-grain rice mix and flavour it with fresh herbs and orange dressing

This nutritious 7-grain rice salad can be served hot or cold, as lunch or alongside a main course

Mixing several kinds of rice and grains yourself could be fun, but you can readily purchase a rice mix in most grocery stores.

Ingredients 


  • 2-1/2 cups water (or vegetable or chicken stock)

  • 1 cup 7-grain rice mix

  • 1 tsp. unsalted butter

  • 3/4 cup dried Black Mission figs, quartered

  • 1/2 cup chopped fresh mint

  • 1/2 cup chopped Italian parsley

  • 1/2 cup toasted pumpkin seeds


Dressing:


  • Zest of 1 orange

  • 1/3 cup fresh orange juice

  • 1 medium shallot, finely diced

  • 1 small garlic clove, minced

  • 1/2 cup extra-virgin olive oil

  • Sea salt and freshly ground pepper



Instructions

  1. Bring water (or stock) to the boil.
  2. Add the rice mix and butter. Return to a boil.
  3. Reduce heat, cover tightly and simmer for 35-40 minutes.
  4. In the meantime, combine all dressing ingredients together.
  5. Taste, adjust seasoning and set aside.
  6. When rice is cooked, remove from heat and place in a serving bowl.
  7. Pour dressing over. Add figs and stir to combine.
  8. If serving the rice hot, add the herbs, top with pumpkin seeds and serve immediately.
  9. If serving at room temperature, let rice cool and just before serving, add herbs and pumpkin seeds.

Serves 6.
