Recipe: Santa Fe Chicken

This colourful, flavourful chicken dish is easy and healthy

Chicken + veggies + rice equals Santa Fe delight

This colourful, flavourful Santa Fe chicken dish can be served as an appetizer or as a main course with 
steamed rice

Ingredients

  • 
1/2 cup olive oil

  • 1 yellow onion, diced (about 1 cup)

  • 4 garlic cloves, minced

  • 2 red bell peppers, seeded and diced

  • 1 (14 fl. oz.) can kernel corn, drained

  • 3 boneless chicken breasts, skinned and cut into bite-size pieces

  • 2-3 Tbsp. hot chili powder

  • 1 tsp. ground cumin

  • 1/2 bunch cilantro, chopped

  • 1 tsp. dried chili flakes (optional)

  • Warm flour tortillas or corn chips



Instructions

  1. Heat 1/4 cup of the oil in a wide sauté pan.
  2. When oil is hot, add onion and 2 of the garlic cloves.
  3. Cook for about 5 minutes or until softened.
  4. Add red peppers and corn and cook over medium heat for 5 more minutes or until vegetables are soft.
  5. Remove and set aside.
  6. In the same pan, heat remaining 1/4 cup oil.
  7. When oil is hot, add remaining 2 garlic cloves along with the chicken.
  8. Cook, turning occasionally, for about 10 minutes or until well browned.
  9. Stir in the chili, cumin, cilantro and optional chili flakes.
  10. Add reserved pepper-corn mixture and heat through to blend the flavours.
  11. Taste and season with salt.
  12. Serve on a decorative platter garnished with wedges of warm flour tortillas or corn chips.

Serves 6.
