Roasted Almonds & Garbanzo Beans

Need a new snack idea to go with cocktails or to serve at your next party? This simple four-ingredient recipe whips up a delightful little alternative to plain old peanuts or predictable potato chips.

Ingredients

  • 1 (540 g) tin garbanzo beans
  • 3 Tbsp. good-quality olive oil
  • 1½ cups whole almonds, shelled
  • 1 Tbsp. Moroccan rub (or whatever flavour of rub you prefer)

Instructions

  1. Preheat oven to 400°F.
  2. Drain and rinse garbanzo beans. Lay beans flat on a paper towel to absorb most of the moisture.
  3. Transfer beans to a cookie sheet and drizzle with half the olive oil.
  4. Roast garbanzo beans in preheated oven for 15 minutes. Remove pan from oven and allow to cool a bit.
  5. Add whole almonds to beans. Drizzle with remaining half of olive oil.
  6. When cool enough to handle, toss almond-bean mixture with your hands to ensure everything is evenly coated. Then sprinkle with spice rub of your choice, ensuring that the rub is also distributed evenly.
  7. Reduce oven temperature to 350°F and roast beans and almonds together for a further 10 to 15 minutes. The almonds should be crispy and the beans crisp. Cool before serving.
