When I’m searching for a recipe, I often look for something that makes use of ingredients I already have in my fridge.

That’s why this recipe in Chatelaine magazine for roasted fish with feta crust caught my eye.

I had half of a leftover a tub of feta cheese in my fridge and was looking for a new way to use it. This recipe looked dead easy, and it turned out to be just that. And it was really delicious.

I made the recipe with halibut, but I’m sure any chunky white fish would do. This is a dish you could easily make on a weeknight, or dress it up with a glass of wine for a lovely weekend meal.
