Squash your hunger with these quick and easy savoury zucchini patties, perfect as a main or starter

It’s hard to say no to all your friendly hobby gardeners who want to heap their homegrown zucchini upon you. Forget the muffins and breads and bring on a savoury little fritter that’s great on its own or served as a side dish.

Ingredients

  • 2 whole zucchini
  • 1 large egg
  • 2 Tbsp. finely diced shallot
  • 1 Tbsp. chopped fresh dill
  • 2 tsp. chopped fresh mint
  • 1 cup crumbled feta cheese
  • 2 handfuls panko crumbs
  • Sea salt and fresh pepper, to taste

Topping

  • ⅔ cup sour cream
  • 1-2 Tbsp. horseradish
  • Fresh dill sprigs

Instructions

  1. Grate the zucchini, leaving the skin on, on medium shred.
  2. Squeeze out all the moisture and you should have about 1 cup grated zucchini when compressed.
  3. Set aside.
  4. In a bowl, beat the egg lightly. Add the shallot, dill, mint and crumbled feta cheese.
  5. Stir in the grated zucchini and combine. Add the panko crumbs. The mixture should not be soupy, but if there is a lot of moisture, add a bit more panko.
  6. Season with the sea salt and pepper.
  7. Scoop golf ball-size portions of the zucchini mixture and shape into patties.
  8. Heat a non-stick pan (I prefer Scan Pan) over medium-high heat and add 1 tsp. olive oil.
  9. Fry patties in the pan until golden brown on both sides. Transfer cooked patties to a plate lined with paper towel.
  10. Continue until all the batter is used. (You will have to add a bit of oil to the pan as you go along.)
  11. To make the topping, mix together the sour cream and horseradish.
  12. Garnish the patties with the mixture, then add a tiny sprig of dill.
