Strawberry Champagne Popsicle Recipe

These refreshing frozen treats from the Fairmont Chateau Whistler’s Mallard Terrace are perfect for a hot summer day



  •  3 cups strawberry purée
  • 1 cup sugar
  • 1 cup water
  • 1 cup champagne
  • 5 fresh strawberries
  • Popsicle moulds


  1. Mix strawberry purée, sugar and water in a saucepan and heat until boiling.
  2. When cooled, add the champagne and stir.
  3. Chop the fresh strawberries and drop a few into each of the popsicle moulds.
  4. Carefully pour the strawberry champagne mixture into the popsicle moulds.
  5. Place popsicle sticks in the centre of each of the moulds and put in the freezer for a minimum of four hours.
  6. Once frozen solid, carefully remove the popsicles from the moulds, arrange on ice bed and enjoy!
